Free Recipe: The Giant Protein Cookie

Transform your bowl of protein oats quickly and easily into โ€œThe Giant Protein Cookieโ€!ย  The addition of baking powder and a little time to bake is all it takes.ย  Mix and match flavors of protein powder and instant sugar free pudding mix, add inโ€™s and toppings and you may find yourself exploring endless variations of your own giant protein cookies too. ย 

Serves 1

(base recipe minus toppings and add ins)

INGREDIENTS YOU’LL NEED

  • 240ml 2% milk 
  • 40g old fashioned rolled oats
  • 30g whey protein powder of choice
  • 10g sugar free instant pudding mix
  • 5g baking powder
  • 15g monk fruit zero calorie granulated sweetener
  • Pinch of pink Himalayan granulated salt
  • optional toppings and add ins such as sprinkles, chocolate chips, nuts, raisins, dash of cinnamon, or cocoa, etc..ย 

Pro tip:ย  You can use up to 10g of cocoa powder or pb fit peanut butter powder in the cookie mixture without messing it up.ย 

DIRECTIONS

On the stove top or microwave, cook the oats in the milk until softened. 

In a  mixing bowl measure out your protein powder, pudding mix, zero calorie sweetener, baking powder, a pinch of salt and any add ins that do not melt like nuts or dried fruit. 

Add your cooked oats in milk to the bowl with your measured dry ingredients and whisk together for 1 minute. This will help it to thicken. 

Pour protein oat mixture on a parchment lined cookie sheet.  Top with any melting ingredients like chocolate chips.  (Can also wait and top immediately after baking while the cookie cools.)

In a preheated oven bake at 350 degrees for 15 minutes.

Remove from oven and allow to cool a bit before removing from the parchment paper.  

Then enjoy the warm and fresh from the oven giant cookie! ย  ย

Free Recipe: Double Chocolate Fudge Protein Brownie

I stumbled across this perfect protein brownie recipe on accident!  I was trying to create something else utilizing canned pumpkin and chocolate and what ended up happening was that I made divine brownies instead!  The pumpkin is what makes this brownie possible. You donโ€™t taste the pumpkin at all, instead it gives this brownie itโ€™s perfect texture without using butter and allows the rich chocolate flavor to come through.๐Ÿคค 

Makes 8 servings

Per 60g serving

135 calories 

9g protein

19g carbohydrate

3.5 fat

INGREDIENTS YOU’LL NEED

  • 2 eggs 
  • 75ml real maple syrup 
  • 75g nonfat Greek yogurt (unsweetened applesauce can also be used and works great!)
  • 140g canned pumpkin 
  • 25g cocoa powder 
  • 50g Chocolate Protein Powder of choice 
  • 25g all purpose flour 
  • 50g semi sweet chocolate chips (or mix and match any kind of baking chips such as milk, dark, white or peanut butter chips)
  • 5g baking powder 
  • 1/2 tsp ground pink Himalayan saltย 

DIRECTIONS

In a mixer or by hand mix together the eggs, maple syrup, Greek yogurt, and pumpkin until smooth.

By hand fold in the cocoa powder, baking powder, and salt.

By hand fold in the protein powder.

By hand gently fold in the flour and chocolate chips until smooth and just combined. To not over mix!

Pour the batter in a parchment lined 8×8 baking pan and bake at 325 degrees for 22 minutes.

Remove from oven and allow to cool on a wire rack. The middle of the brownie should still be a bit gooey when you first remove it from the oven. It will further set as it cools.

Once cooled cut into desired portions and store in the refrigerator for up to 4-5 days.

For this recipe if you can open a can and chop an onion you can make this.ย  If there was ever a recipe to get you started on your meal prep lifestyle this is it.ย  It is delicious, high volume, high protein and full of flavor!ย  The pumpkin blends in seamlessly while adding a sense of sweetness and richness to the chili whileย  keeping the calories low.ย  Pumpkin is so versatile!ย  If you like my recipes and fitness tips remember to share!ย  We can all reach our fitness goals and enjoy the process too!โค๏ธย

For 1 serving (443g)

Ingredientโ€™s youโ€™ll need:

  • 1 can pumpkin (425g)
  • 1 can black beans (425g)
  • 1 can tomato paste (170g)
  • 1 large can diced tomatoes with chilis (794g)
  • 1 can beef broth (425ml)
  • Some jarred or canned salsa (300g) 
  • 2 tbsp chili powder (30g)
  • 760g ground lean turkey (93% lean)
  • 1 large onion chopped (400-500g)
  • 1/2- 1 tsp ground pink Himalayan salt

Directions:

Add everything to a slow cooker and cook on high for 5-8 hours.ย  Stir occasionally and chop the ground turkey up as it cooks so it can blend with the chili.ย  Allow to cool a bit before storing.ย  When reheating add some water to make it more high volume of you need.ย  Or top with cheese, sour cream, etc.. and enjoy with cornbread/corn chips if you need more calories and less volume.ย  Enjoy within 5-6 days of preparing or store portions in the freezer for future meals.ย

Get your recommended per meal 30g of protein in this delicious dark chocolate pudding.  Also a great recipe for those of you new to meal prep!  Keep the calories lower by topping with your favorite fresh or frozen berries or cherries.  Also great topped with chopped walnuts for more of a brownie vibe.   

Serves 1 (fruit topping included)

  • 125 ml 2% milkย

  • 15g chia seedsย 
  • Pinch of pink Himalayan salt

  • 100g fresh or frozen berries or cherries

Refrigerate for at least 2-3 hours or overnight before enjoying. Stores for up to 2-3 days in the refrigerator.

Free Recipe: 5 Minute Light And Herby Chicken Salad

Make your health and fitness goals a priority with the help of this tasty, quick and easy chicken salad recipe. It is high in protein, low in calories and has loads of flavor thanks to the green herbs. It stays light thanks to the nonfat Greek yogurt, but still has enough mayonnaise to give you the rich tangy flavor of their full fat counterparts. Don’t have canned chicken. Try canned tuna or salmon instead!ย 

Serves 2: Per serving –140 calories 24g protein 2g carbohydrate 4g fat

INGREDIENTS YOU’LL NEED:

  • 1 can cooked chicken drained (I like the one from Costco)ย 
  • 30g nonfat Greek yogurtย 
  • 14g mayonnaiseย 
  • 1-2 tbsp chopped green fresh herbs (any single herb or combination of dill, parsley, cilantro, and chives)ย 
  • 1/2- 1 tsp dried herbs if no fresh are availableย 
  • Salt and pepper to taste

DIRECTIONS :

Mix all the ingredients together in a bowl. This makes enough for two. So you can either share or save it for the next day. Leftovers store up to 3 days in the refrigerator. Perfect with bread, in a wrap, on crackers or use it to top a bed of greens.

Forget to meal prep something this weekend? Not to worry. I’ve got you covered.๐Ÿค— Make this easy and versatile chili. Enjoy on its own, over rice, in a taco, as a burrito filling, and as dip for tortilla chips. Be creative and let this flavorful chili keep your meal times inspired and flavorful all week long!ย ย 

Makes 10 servings
Per 290g serving
200 calories
24.7g protien
21.9g carbohydrate
1.3g fat

INGREDIENTS YOU’LL NEED:

  • 932g boneless skinless fresh or frozen chicken breast about 4-5 chicken breasts.ย 
  • 170g tomato paste (1 can)ย 
  • 425g canned black beans (1 can)ย 
  • 300g fresh or frozen cornย 200g diced onion (about 1 large)
  • 250g sliced fresh mushroomsย 
  • 3 cloves garlic, mincedย 
  • 2 tsp ground pink Himalayan saltย 
  • 30g taco seasoningย 
  • 1 tbsp apple cider vinegar or juice of 1/2 limeย 
  • 960 ml water (1 quart)ย 

DIRECTIONS
Add all the ingredients to a crockpot and cook on high for 4-5 hours or until chicken can easily be shredded with 2 forks. Shred chicken with 2 forks and stir chili well.

Allow to cool a bit before storing in the refrigerator for up to 5-6 days. Can also easily freeze portions.

When it comes to my dessert, meet my evening staple. I want to wake up feeling rested and ready. This is for the those with high recovery demands. It is loaded with all the good stuff to help me sleep well and recover overnight.

Makes 1 Serving

Ingredients Youโ€™ll Need:

125ml 2% milk

75g nonfat Greek yogurt

30g instant and flavored oatmeal packet

15g Whey Protein Powder

8g sugar free instant pudding mix

10g zero calorie sweetener of choice

300g fruit of choice

10g peanut butter powder or cocoa powder

pinch of salt

Optional: 10g zero calorie sweetener of choice sprinkled on top

Directions:

In a glass storage bowl, whisk together the milk, oatmeal, protein powder, pudding mix, sweetener, pinch of salt, and yogurt for 1 minute. This will help it thicken. Top with the fruit, optional sweetener and peanut butter and or cocoa powder.

Bright and zesty with lemon this easy dressing also combines well with the complex flavors of Zatar seasoning. Perfect for any veggie salad, it also pairs well with Mediterranean favorites such as olives, feta cheese, and hummus. Also a great marinade for chicken, fish, or lamb.

180ml lemon juice

90ml olive oil

30ml honey

5g Zatar seasoning blend

Directions:

Add everything to a blender or food processor (except the Zatar seasoning) and blend until smooth. Place in a storage container and stir in the Zatar seasoning blend. Keep refrigerated and enjoy within 10 days.

Pro Tip: Donโ€™t skip the xanthan gum. It ensures the dressing will be smooth and well blended. It also keep the dressing from separating.

Shown with a double portion because I had the room in my own calorie and macro budget. When it comes to recipes and customizing for your own needs, go for it and make some tweaks.

INGREDIENTS YOU’LL NEED

15ml 1% milk 
10g PEScience CakePop Select Protein Powder 
5g Jello Cheesecake Instant Pudding Mix

1 snack size candy bar of choice 


DIRECTIONS

In a small bowl mix the milk with the protein powder and pudding mix. It will make a thick frosting like consistency. Then stir in the yogurt mixing well. Finish by topping with your crumbled candy bar of choice. Viola! Done!! Can be enjoyed right away or made ahead of time for an easy breakfast, snack or dessert. Enjoy within a day or two of preparing. Store in the refrigerator.
